In addition to its delicious flavor, it has an excellent nutritional profile, and with a small quantity of freeze-dried acerola you may obtain good levels of antioxidants, vitamins and minerals.
Acerola is the fruit with the second largest quantity of vitamin C, after camu-camu. Vitamin C is associated with the prevention and treatment of scurvy and with the production of collagen, and performs a fundamental role in the immune system.
The excellent antioxidant properties of acerola are not restricted to its vitamin C content, they also include carotenoids, vitamin A, B vitamins, dietary fiber, minerals and electrolytes, as well as polyphenols.
Besides the benefits to human health, acerola also has technological properties that are applicable to the food industry, preventing oxidation, enhancing the color stability in fruit preparations and meat. In bakery applications, it is a replacement for ascorbic acid, allowing a clean label.
